Ollie Dabbous – Owner & Head Chef, DABBOUS RESTAURANT & BAR
Ollie has worked in leading fine dining restaurants for nine years. He was head chef at Texture, which gained a Michelin star after just two years.He began as a commis at Raymond Blanc’s Le Manoir aux Quat’ Saisons (**), where he worked for four years, covering every section in the kitchen.
He then moved to Hibiscus (**) for a year as Claude Bosi‘s sous chef. At both establishments, he created dishes that appeared on the menus.
Ollie then relocated to San Sebastian to work under Andoni Luis Aduriz at Mugaritz (**), recently voted number four in the World’s 50 Best Restaurants.
Ollie’s remarkable career has also seen him undertake stints at restaurants including The Fat Duck (***; Bray), Pierre Gagnaire (***; Paris), L’ Astrance (***; Paris), Noma (**; Copenhagen), WD-50 (*; New York) and Umu (*; London).
In March 2014 Ollie launched his second venue with Oskar Kinberg, casual-dining venture Barnyard.
Today Ollie is regarded as one of the UK’s most in-demand chefs. He has also collaborated with a number of brands.

Prior to opening Dabbous, Oskar was bar manager at The Cuckoo Club, a leading private members’ club in Piccadilly, having started there as head barman when it opened its doors in November 2005. He developed new cocktails and along with his team, served up to 600 guests from 8pm-3am on a busy night.
Oskar has hosted independent cocktail training sessions for various companies as well as regularly being approached by drinks brands to create cocktails that showcase their product, including Bombay Sapphire Gin for the Dusk Bar at Somerset House. He has also been in charge of the bar department for some of The Cuckoo Club's successful events outside of the UK, most notably the Ocean’s.
